Default: noun + adjective — un contrato largo, vino tinto. Before the noun go quantifiers (mucho, poco, varios), ordinals (el primer piso), and adjectives used subjectively or ornamentally (una larga espera, la blanca nieve).
Placement shifts tone: postposed distinguishes (las casas viejas = the old ones, not the new), preposed evaluates or assumes (las viejas casas = the houses, which happen to be old). A handful of adjectives change meaning entirely — see the dedicated rule.
